recipe: greek yogurt dip

In my quest to eat a little better and lose this last fifteen pounds of baby weight before my baby goes off to college turns two, I’m on the hunt for healthy snacks. I like snacks. And I need them. I can’t go more than 2 hours or so without needing food of some kind. I’m like a newborn! Except for the sleep and needing diapers thing, of course.

Anyway. So I went back into my recipe folders and found this and realized it would be a perfect thing to keep on hand. Loaded with protein and veggies and FLAVOR, this stuff is so so good. Very refreshing to snack on, with veggies, preferably, but some whole wheat crackers or pita chips would work too.

Basically just mix it all up and eat it. YUM.

Greek Yogurt Dip
  1. 1 cup plain non-fat Greek style yogurt
  2. 1 avocado, finely chopped
  3. 1/2 cup chopped tomatoes
  4. 1/2 cup cucumber, finely chopped
  5. 1 tsp dried dill
  6. 1/2 tsp garlic powder
  7. salt to taste
  1. Mix everything together in a small bowl. Chill and serve with crackers or veggies.

    Yum! Thanks for posting this! I’m doing 6 weeks of the “eat to live” plan right now, and fat is just falling off, but once I start adding back fat free dairy, you can bet this will be on my list of new recipes to try!

    And congrats on your running success by the way! Im doing a 10k at the end of march, keeps me motivated. Too bad u don’t live in SC–u could join me–it’s a beautifully scenic race over the Cooper river bridge in Charleston. Did it last year but hope to improve my time this year : )

    Your kids are looking too cute these days! I need to post catch up on my family blog and put some new pictures of of my littles!

    Wow! This looks absolutely incredible and I need to make this! The funny thing is that I have everything I need in my fridge except for the greek yogurt which I ate yesterday and now I’m upset because the store is closed and I have to wait until tomorrow. Hmmph.
