recipe: tomato risotto (& a giveaway: Redpack Tomatoes!)

I use canned tomatoes in my cooking all the time. I make my own sauce when I cook spaghetti and other pasta dishes and canned tomatoes make it SO easy. And it tastes so fresh- or at least as fresh as I can get without having a garden in my backyard because that would just be mean for me to kill all those poor, unsuspecting vegetables (gardener, I am not).

So when I was contacted about a giveaway for Redpack Tomatoes, I was excited. I’ve USED this product before! On my own! How fun to be able to share it with my readers.

In case you aren’t familiar with Redpack Tomatoes and what they’re all about, you can find out all sorts of useful things over on their website, Redpack claims to have a ‘tomato obsession’, specializing in growing and creating products involving only tomatoes (no beets or brussel sprouts or pearl onions, as their website makes clear. heh) They’ve been doing it all for a very long time, so they know their stuff.

But enough about all that. LET’S TALK FOOD.

I don’t know if you can tell from the perspective, but that big can? IS HUGE. It made me laugh so hard when I opened it. How fun is that? A gigantic, oversized can of tomatoes filled with kitchen goodies!

I also received a few recipes to try out using some of the Redpack products. I decided to test the Tomato Risotto In Minutes- because I love rice and cheese and tomatoes, and I love things that are easy to make. WIN.

Tomato Risotto
  1. 4 tbsp butter
  2. 1 clove garlic, minced
  3. 1 onion, chopped
  4. 1 28 ounce can Redpack Diced Tomatoes with Basil, Garlic, and Oregano
  5. 1 1/2 cups uncooked Arborio or other short-grain white rice
  6. 1 15 ounce can Redpack Tomato Sauce
  7. 1/2 cup parmesan cheese
  1. In a 4-quart, microwave-safe dish, combine butter, garlic, and onion. Microwave on HIGH for 3 minutes. Place Redpack Diced Tomatoes with Basil, Garlic, and Oregano in the dish and microwave until hot but not boiling (2 minutes).
  2. Stir in the rice; cover and microwave on HIGH for 6 minutes. Stir in Redpack Tomato Sauce and microwave on HIGH for an additional 10-12 minutes or until liquid is gone. Stir in cheese and serve.

It tasted pretty darn good when it was all finished. I actually couldn’t find Arborio rice at my grocery store (FAIL.), and I couldn’t find any short-grain rice either (FAIL!) So I subbed in a medium-grain rice. This just meant it took a LOT longer for the rice to absorb the liquid and get nice and soft. But once it did and I mixed in the cheese… YUM. And easy! Not as magical as risotto you’d make on the stove, I’m sure, but seriously: a 4 year old helper and a baby in the house. Who has time for that??

    We use canned tomatoes all the time; for pasta sauce, and especially to make homemade salsa in the winter! But I think my favorite recipe with tomatoes is a zucchini with tomatoes dish that came from Rachel’s family. Yum!

    I’m Italian so it would have to be… sauce! I can’t eat yummy carb-filled pasta, so when I make it for George & the kids, I have a big bowl of banana peppers and jalepeno peppers in sauce (one of my favorite things in the world :).

    I make a tortilla soup. I’m obsessed with it! It allows for cilantro, avocado, and cheese. What else could a person ever need?

    This is going to be really simple. Guacamole!

    Fresh avocado, fresh garlic, fresh tomatoes, a little lime and some salt and pepper. So good!

    Homemade sauce! Homegrown beef, sausage, onions, garlic, zucchini, peppers, spices, a can of tomato sauce, a can of tomato paste, and two cans of Italian diced tomatoes! I make a huge batch and freeze 3/4th of it. (Thank goodness for the deep freeze!)

    My fav is a recipe for Mexican Beef Stew, It’s like beef stew with extra veggies (corn, zucchini, tomatoes) and spice. Yum!

    I love Red Pack tomatoes almost as much as Heinz Ketchup! And I am always looking for short-cut cooking ideas on weeknights. One of my favorite recipes is stuffed peppers – mix a can of diced tomatoes in with the rice/beef filling and it makes such a difference! Then you blanch the peppers for a few minutes in boiling water before stuffing them with the tomato-ey filling. Cuts the baking time in half and tastes delicious ;)

    Honestly, I have never heard of Red Pack before. Gotta watch out for it in the grocery store next time. My favorite dish is my creamy tomato sauce. It’s pretty easy to make and so so good!

    I use canned tomatoes in picadillo. It’s Cuban ground beef with tomatoes and tomato sauce with olives and raisins. Sounds awful. Tastes great. I always have them on hand for that reason. :-)

    Mmmm… I love to use canned tomatoes mixed with cream to make a number of yummy, creamy pasta dishes. My favorite is PW’s vodka pasta. So, so yummy!
