recipe: Chicken Pesto Pizza
So, how far behind am I on posting recipes? So far behind that this one includes pictures from my old camera AND our old house!
But the food is still delish. I promise.
Ingredients: pizza crust, a chicken breast, olive oil, mozzarella cheese, a tomato, and a jar of pesto sauce.
Slice the chicken and place into a small skillet with some olive oil and black pepper.
Saute the chicken until cooked through.
While the chicken is cooking, prep the pizza crust. I just use the refrigerated tube-y crust, you can use whatever kind you want.
Spread the pesto sauce on the pizza crust.
It sure looks gross, but it’s soooo yummy.
Top with CHEESE!!!
Cut the tomato into thin slices.
Place the tomato slices on top of the cheese- kind of like pepperoni!
When the chicken is done cooking, add it to the pizza.
Bake according to the pizza crust directions (for me, it was 15 minutes at 425 degrees F) until the cheese is all melty and yummy!
Chicken Pesto Pizza
Ingredients
pizza crust
8 oz mozzarella cheese
1 jar pesto sauce
1 boneless, skinless chicken breast
1 tomato
olive oilPreparation
Slice chicken and sauté in olive oil. Add salt/pepper if desired.Spread pesto sauce over pizza crust. Sprinkle with cheese. Top with chicken and tomato. Bake for 10-15 minutes (or as required for your particular pizza crust) until cheese is melted and the crust is lightly browned.

I am SO HUNGRY right now. And craving pizza. With pesto sauce. I’m pretty sure that is not a good idea when I’m about to go to bed.

I would recommend leaving the whole tomatoes off, cause there disgusting, and slicing the chicken into smaller pieces that way you get chicken with every bite instead of some giant chunk sliding off in one bite.
ha well if you don’t like tomatoes, you can certainly leave them off! We actually like the larger pieces of chicken, but that’s definitely something you could do differently.
