I got this recipe from an old co-worker of mine. His version was actually served cold and didn’t have chicken. I’m sure that’s delicious too, but I have a husband who has declared that his dinner needs to have had a face at some point, so serving him cold noodles wouldn’t go over very well. Just add Chicken!
Not only is this a tasty dish, it’s really easy (which is a theme in my cooking.) It does contain peanuts (and peanut butter! and peanut oil!) so obviously, if you’re allergic, you’ll want to skip this one.
The ingredients: chicken breasts, linguine noodles (or regular spaghetti, it doesn’t really matter), peanut oil, garlic, sesame oil, bell pepper, crushed red pepper, peanut butter, honey, unsalted dry roasted peanuts, soy sauce, green onions, sesame seeds.
Slice up the chicken into strips. Place it in a skillet with some peanut oil (I didn’t really measure this… I added quite a bit, you can adjust this to your tastes), some minced garlic, and some black pepper to season the chicken.
While the chicken starts to cook, slice a bell pepper. I like red for this dish, mainly because it’s colorful. Later we’ll be adding green onions and the colors go well together. I’m all about coordination in my food.
Anyway. Throw the bell pepper in the skillet with the chicken.
While all of that cooks, combine the oils (peanut, sesame) with the crushed red pepper flakes in a small saucepan.
Start that heating for about 5 minutes. Let’s check the chicken while we wait!

Oh- by the way- you should also get some water boiling for the pasta. DUH. And when that’s ready, put the pasta in to cook!
Back to the oils- give it a stir as it’s heating.
Turn off (or remove from) the heat, and let it cool for a moment or two. Then add the peanut butter, honey, and soy sauce. The amounts of these can vary depending on how peanut butter-y you want it. I like mine pretty peanut butter-y.
The oils will still be pretty hot so you probably won’t need to re-heat to melt the peanut butter. Just keep stirring until it’s nice and smooth.
Chop some green onions (and also the peanuts- forgot to photograph that!)
When the pasta is finished cooking, drain and combine with the chicken and bell peppers.
Add the green onions, peanuts, and sauce:
Finally, add some sesame seeds!
Wow I’m suddenly really hungry for peanut butter.
Spicy Peanut Noodle Pasta
3-4 boneless, skinless chicken breasts, cut into bite-sized pieces
1/4 cup peanut oil
3 tbsp sesame oil
1 red pepper, sliced thin
1 tsp red pepper flakes
1 tbsp peanut butter (I usually add more than this!)
1 tbsp honey
1 tsp soy sauce
1/4 cup chopped roasted peanuts
1/4 cup chopped green onion
1-3 tbsp toasted sesame seeds
Cook pasta according to package directions. Saute chicken with peanut oil, garlic and red pepper. Combine peanut oil, sesame oil and pepper flakes. Heat 5 minutes on low. Remove from heat. Add soy sauce, honey, and peanut butter. Pour over pasta; add peanuts, green onion, sesame seeds, and chicken & bell pepper mixture. Stir to combine.
