recipe: buffalo chicken pasta

Since I’m more of a housewife now than I’ve ever been before (not that I had to go far to beat my previous status, heh) I think I’ll start posting some of the recipes I’ve been trying out lately. Some of them are from family members and I’ve had them sitting in my recipe box for ages, some are from the internet, and some are from Rachael Ray’s new show (and really, I don’t think she’s all that bad… but maybe it’s because I’ve only watched her for a few weeks now? Or because I’m usually working while she’s on, so I’m a bit distracted? I just like that she cooks meals with stuff I’ve heard of before and that I can find with relative ease in the grocery store!)

Tonight for dinner I tried a new recipe I found on a bulletin board I’ve been visiting lately, with a little bit of worry that it might… well, that it might suck. It was one of those recipes that sounded like it might be good, but the concept and combination of some of the ingredients were a little strange. But, it actually turned out pretty good.

Buffalo Chicken Pasta
  1. 1 lb penne pasta
  2. 1 tbsp paprika
  3. 1/2 tbsp each salt, garlic powder, and pepper
  4. 1 lb chicken breasts, cut into strips or cubes
  5. vegetable or olive oil
  6. buffalo wing sauce, as much as you can handle! (I used Frank’s Red Hot)
  7. 1 cup diced celery
  8. 1/2 cup red onion, diced
  9. 1 cup mayo
  10. 1/2 cup blue cheese dressing (I actually used ranch)
  11. 3/4 cup milk
  1. Cook pasta according to directions. While pasta is cooking, prepare chicken with spices and cook in oil. Add hot sauce and saute with chicken. When chicken is mostly cooked, add onion, celery, and saute until chicken is fully cooked. Combine mayo, dressing, and milk in medium bowl. Add to skillet. Toss with pasta.
As you can tell, it’s extremely healthy (dude, I’m kidding. 1 cup mayo and 1/2 dressing? nice.) But it’s good and sometimes, you need to just eat stuff that isn’t on the light menu :)

Things we thought of to make it better: diced green peppers, and Dan says ‘More chicken!’

    That sounds tasty – thanks for sharing! We are JUST NOW getting to not dislike Rachael Ray. I don’t know why but she bugged us for a long time. We still shake our heads at her crazy enthusiasm but we’re starting to enjoy her just a bit. ;)

    Yeah, I’m the same as Laura, just shaking my head at her over-enthusiasm. But really, isn’t it sad how negative people are at happy people? It worries me! It’s pretty funny how she says things like “YUM-O” and “EVOO Extra Virgin Olive Oil” (we get it. You don’t need to clarify it every time. Otherwise what’s the point of an abbreviation?), and things like that. I actually really like her show $40 a Day. Trave & food? I’m so there!

    I’m with Sandy…my favorite show of hers…$40 a day. I find it so interesting, maybe because I am the ultimate bargain shopper and you put food in there..perfect!
    I might try this tomorrow for dinner. The substitutions you made with the Franks and ranch…I’ll do the same!

    haha, i’ve been watching rachael ray too. she has really good ideas, but for some reason i really can’t stand her voice. it bugs me. oh well, at least she has an online site that i can get ideas off of :)
